Meatloaf

The food, not the band.

I have washed all my dishes and made meatloaf. My evening therefore does not feel wasted.

[livejournal.com profile] ai731 paid me a surprise visit while I was making the aforementioned meatloaf, bearing a garbage can. An outdoor garbage can, that is, to prevent the stray cats in the neighbourhood going after our chicken bones and spreading the garbage all over the place. Yay for garbage cans!

The slight downside was that she startled the bejeezus out of me (she and t! usually come to the front door) and also because I was exercising the prerogative of those living alone and not wearing any pants. Oops.

*cough*

So after a mad scramble I got outside (the apartment is cleaner, but not quite ready for human visitation yet) and we admired the evening and the weather and expressed admiration for the "real" handles on the garbage can, unlike the stupid indentations in the plastic that most boast, which are useless in winter when one is wearing mittens or gloves.

News you need, folks. ;)

Okay, not so much meatloaf as meatcrumble. Anyone know why it's falling apart? Not enough rice? Overcooked? Help?

I'm hoping it's just undercooked, so I'm leaving it in an extra 5-10 minutes to see if that helps.

No. The recipe I used called for rice. Should I have put breadcrumbs as well? [livejournal.com profile] joane says she uses oatmeal...

Maybe yours is a recipe for meat-crumble, then. My mom and my Dear Ex always used to put eggs in the meatloaf.

I'd probably use one or two in a 500g package of meatloaf, and two or three in a bigger pan.

The rice would make it a meat crumble vs a meatloaf, also eggs hold it together.

Foolproof recipe for delicious meatloaf:

1 regular package ground beef
1 regular package ground veal (or you can use all ground beef if you don't eat veal)
2 eggs
About 1 cup breadcrumbs (I prefer the Italian-seasoned)
black pepper
salt
grated cheese (Pecorino or Parmesan)
salsa OR ketchup & finely chopped onions - about 4-6 tablespoons
chopped fresh parsley (optional)

-- you can also add chopped mushrooms and/or chopped red peppers

Mix all ingredients together - this is meatloaf, use your hands if you like! Put in loaf pan. (One large or two small). Bake until bubbly. Guaranteed not to crumble!

I always use rice in mine, but also add eggs - about one egg per pound of meat. I use a 50/50 mix of ground beef and pork sausage.

I also find that half pork half ground beef works well too. Eggs are definately a must though. I have yet to find a recipe without eggs that sticks together.

I have a family and am usually in my robe or, when everyone is out, nothing. I hate clothes.

Using pork sounds good, I should try that.

I usually make Italian meatballs with a 2 parts ground beef, 1 part ground veal and 1 part ground pork mixture.
