There really is no way to get around Blitz Ball and Chokobo Races just like Leveling Up your Characters to get them fit to finish Final Fantasy... Practice makes Perfect. The more you do it, the better you are going to get.
For Blitz Ball, do you know how to recruit GOOD players? (Everytime you meet a person, press Square instead of X to find out if they are a Blitz Ball Player. At first, all you get is how much they cost in salary... but the more Blitz Ball you have played, the more recruiting information you can get as you go on...)
Tidus needs to learn Jecht Shot. (Then Jecht Shot 2.) Tidus is The Man. When you have developped him with all of the Techniques, he will lead the way to all of your victories. In the first games you play: Pass. Pass. Pass. Pass. Pass. Pass a lot. Pass some more. And then Pass. (Eventually, take a shot with Tidus.) The First Teams you face usually only have one or two good key players that if you mark well, you will be able to neutralize and get past. And when you aim to shoot with Tidus, shoot to the Left side of the net. (Don't ask. But most goalies defend the right side better than the Left.)
(My Blitz Ball wasn't so great... but with practice, I got through. And some help from a friend.)
For the Chokobo Races, I like Gats insight on the matter. I know you don't prone violence on the regular basis (*Cough*) but you need to find a Punching Bag to express your anger on the Chokobo or you will be hurling PS2 Controllers through your TV screen more often than you would like...
My only advice is to use the Arrows (The "D-Pad") instead of the Analog stick. I find it gives you a little more control and it seems a little easier to use, in general. For example, moving Left to Right (Right to Left) a little faster.
