2 1/2 cups all purpose flour 1 1/2 tsp baking soda 1/2 tsp salt 3/4 cups butter, softened 1 1/2 cups light brown sugar, packed 2 large eggs 3 cups ripe bananas, mashed 1tsp vanilla extract
Optional : 1 cup chopped walnuts
Instructions
Preheat oven at 325 F. Grease two 9 x 5 loaf pans. In a medium bowl combine flour, soda and salt with a wire whisk; set aside. In a large bowl cream butter and sugar with an electric mixer. Add eggs, vanilla and bananas. Beat at medium speed until thick. Add flour mixture and walnuts. Blend until just combined. Pour batter into pans. Bake for 60 to 70 minutes (not sure on that baking time, better check as of forty-five). Bread is done when a toothpick inserted in the center comes out clean.
(Nuts are optional, chocolate chips can be used too!)
