I make a cvariation on the chicken ones as an appetizer for potlucks all the time. I try and get the garlic crescent rolls, but regular is fine, and then I fill them with cooked chopped spinach, sometimes mixed with cheese (ricotta, cottage cheese, parmesan, whatever really), and garlic (powder or minced) if I didn't get the garlic rolls. You just have to drain the spinach really well, and roll them up just like you did your chicken pockets so that nothing spills :)
