Banana bread
Okay, LJ folks. I need a kick-ass banana bread recipe. I know you all like banana bread, and I know many of you must have good recipes.
I have five medium-sized bananas sitting on my kitchen counter, and they're going to turn gooshy soon, so I'm going to make banana bread. (Hey, they were on sale at 19 cents a pound, how could I resist? I've already eaten three)

OK, here's the recipe:
2 cups flour
3/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 large overripe bananas
1 egg
1/4 cup milk
1 teaspoon vanilla extract
Optional: 1/2 - 3/4 cup chocolate chips, crushed/chopped nuts, and/or golden raisins
Preheat the oven to 350 degrees Fahrenheit.
Combine flour, sugar, baking powder, baking soda, and salt in a bowl. Mix with a fork and set aside.
In another bowl, mash bananas until mushy. Add milk, egg, and vanilla, and any of the optional ingredients, and mix until completely blended.
Add dry ingredients to banana mixture. Mix until just combined.
Grease an 8-inch loaf pan. Pour batter into loaf pan.
Bake for one hour or until a knife comes out almost clean from the center. Cool on a wire rack, in the pan, for 10 minutes. Then turn bread out of pan and allow to cool completely.
