Ratatouille is an excellent suggestion, and really perfect for this time of year because all the vegetables are super-fresh at the market. Just remember: half a block of freshly grated Parmesan. Really. Gods, I love this time of year for cooking.

I love tuna casserole much more than I suspect I should.
